WHAT\u2019S THE PLACE?

The beautiful and historic Aldourie Castle is an exclusive hire, 12 bedroom property on the southern shoreline of Loch Ness in the Scottish Highlands. Owned and run by the Wildland conservation project, sitting within its own estate and a very short drive to the amenities of Inverness, it is the only habitable castle on the Loch.

Having undergone extensive and sensitive renovation over the past few years, we\u2019ll be set to reopen complete with bespoke Charvet kitchens, large and bountifull walled garden and acres of greenery and woodland.

We\u2019ve another, much smaller property called Glenfeshie Lodge. An hour and 20 mins drive from the castle, and in the heart of The Cairngorms, where we\u2019ll on occasion cook for guests when the castle isn\u2019t occupied.

WHAT\u2019S THE JOB?

We\u2019re looking for a Sous Chef to be a reliable and integral part of a small kitchen team, who would also be confident and comfortable when working on their own. It would potentially be an ideal position for someone who\u2019s previously worked in a senior role, perhaps now looking for a more sustainable way of working.

It\u2019s really important to get across that exclusive hire cheffing is a different vibe, and that it\u2019s not always possible to follow the rigidity of a restaurant-style schedule week on week. In real terms this means that whilst one week we may do a bit more than 40 hours, another week might be far less. It won\u2019t be for everyone, but personally I\u2019m really into it and we have a huge focus on ensuring you get a proper balance that suits you. We want happy, rested, satisfied chefs.

As Head Chef, I\u2019d love to work with others who share my excitement and passion for elegant, seasonal, beautifully executed food (think River Cafe, St John, Alastair Little, Spring\u2026) and are up for bringing some of their own influences and knowledge to the role.
