Ingredients (Makes about 50 cookies)

210g plain flour

½ teaspoon salt

1 teaspoon baking soda

115g unsalted butter (room temperature)

110g brown sugar
-
67g granulated sugar
-
1 large egg
-
1 ½ teaspoons of vanilla extract

130g chocolate chips
Method

Preheat the oven to 180 ° C / 350 ° F / gas mark 4. Line a baking tray with greaseproof paper.

Mix the flour, salt and baking soda together and set aside.

In a separate bowl, cream and butter, brown sugar and granulated sugar until the consistency is creamy and smooth. Then add the egg and vanilla extract and mix.

Gradually mix in the flour until everything is combined. Following this, stir in the chocolate chips.

Shape the dough into tiny balls, approximately 1½ teaspoons or dough.teaspoons of dough.

Place on baking tray with greaseproof paper and bake for approximately 6-8 minutes, or until your cookies are golden brown.

Let them cool on the baking tray for 2 mins then transfer to a wire rack to cool completely.
Note : The middle of the cookies may look and feel quite moist when you take them out of the oven, do not worry - they will harden while they cool down.
Tip : If you prefer your cookies to be sweet, add a little sugar - they will still be tasty!
